岡山理科大学が研究している特殊な水「好適環境水」で養殖されたウナギが、寿司外食チェーンでは初めて“くら寿司”で販売されることになった。
脂ののりがよく、臭みが少ないのが特長の「おかやま理大うなぎ」は、来月2日より、全国の店舗に12000食限定で並ぶ。
国産のウナギが減少する中、山本准教授の研究する方法は持続可能な養殖として期待されることや品質の高さなどから起用が決まった。
