焼き鳥
焼き鳥とは、一口大に切った鶏肉を竹串に刺して直火焼きしたものです。
鶏肉以外に野菜などを一緒に串に刺して焼くものもあれば、鶏肉以外の肉をやきとりとして提供するところもあります。焼き鳥の味付けは主に塩とタレです。たれの材料は醤油、砂糖、みりん、酒などで、焼き鳥は焼く前または焼いた後にたれに漬けられます。
焼き鳥の典型的な具材は、鶏肉、皮、つくね、レバー、心臓、および砂肝などです。そのほか、場所によっては牛肉、豚肉、豚のほほ肉、スズメ等も提供されます。
日本七大焼き鳥といわれている都市があって、北海道の美唄市と室蘭市、福島県福島市、埼玉県東松山市、愛媛県今治市、山口県長門市、福岡県久留米市です。このうち室蘭の焼き鳥は豚肉です。また東松山のやきとりは豚の頬肉を使います。
鶏肉であれば多くの宗教の人が食べられるので外国人にも人気です。私は日本の焼き鳥を食べることを勧めます。
