巻き寿司
巻き寿司は主に海苔など薄い食べ物で酢飯や具材を巻いた寿司の一種です。
一般的に、巻き寿司の中にはマグロ、きゅうり、海老、卵焼き、ツナ、かんぴょう、いか、紫蘇、たくあん、納豆などが入ります。
伝統的には巻きずしはまきすと呼ばれる素材を巻く道具を使って作られます。多くの家庭では巻きずしは手巻き寿司といって手で巻いて作られます。
ちなみに、江戸前寿司と呼ばれる伝統的な寿司では、巻きずしというと干瓢を巻いたものを指します。
巻きずしには、具材が一つの細巻きと具材が複数の太巻きとがあります。どちらも長さ約3センチに切って提供されます。旧暦でいう節分の日に、恵方巻といって太巻きを切らずに食べる習慣も最近日本中に広がってきました。
千葉県に、断面に絵柄や文字が出るようにする巻きずしもあります。
海外でも色んな所で食べられている巻き寿司ですが、日本でも食べるのを私は勧めます。
