そば
蕎麦とはそば粉を用いて作る麺料理です。広い意味では中華そばや沖縄そばのようにそば粉をを原料としないものもありますが、そば粉を使うものについて説明します。
そばはそば粉のみで作られることもありますが、薄くするとちぎれやすいので小麦粉をつなぎに使うことがよくあります。また、たとえば北海道ではそば粉にゴマを入れて食べることもあります。そのほか海苔や抹茶を入れたりもします。
我々はそばを温かいつゆの中に入れて食べることもありますし、また冷たくしてつけ汁につけて食べることもあります。冷たいそばには海苔が乗せられ、つゆの薬味にネギやワサビやウズラの生卵などが付きます。
代表的な日本の味であるそばを私は温かいものも冷たいものも色々試されることを勧めます。
