いなりずし
稲荷ずしとは油揚げを袋状にして醤油や砂糖で甘辛く煮たものの中に、酢飯などをいれた寿司の一種です。おいなりさんなどとも呼ばれます。
稲荷神の使いであるキツネの好物が油揚げという言い伝えから、稲荷ずしの名前がついたともいわれます。
日本にはさまざまな種類の稲荷ずしがあります。形の多くは油揚げを長方形になるように切ります。この油揚げに酢飯をいれると俵型の稲荷ずしになります。
一方関西地方では油揚げを三角に切った三角の稲荷ずしです。また埼玉県の聖天寿司のように長い稲荷ずしもあります。
具材は単に酢飯だけをいれたもの、にんじんや椎茸、ゴマなど入りの酢飯を詰めたもの、紅ショウガとクルミをいれたもの等様々です。
稲荷ずしは持ち運びしやすい安価な寿司として多くの日本人に食べられています。生の魚が苦手な方でも食べられます。この寿司を食べることを勧めます。
