けんちん汁
けんちん汁は野菜を油でいため、出汁を加えて煮込んで最後に醤油で味を調えた日本の汁物料理です。
けんちん汁はもとは精進料理だったので、出汁には昆布と椎茸を使います。最近ではある人は具材に鶏肉をいれたり、出汁にかつお節や煮干しを入れて作られることもあります。
名前の由来は、鎌倉の建長寺が発祥で建長という音が変化してけんちん汁になったというひともいます。一方中国由来の料理から名前が付けられたという人もいます。
けんちん汁は昔は小正月に大量に作られたそうです。普段料理をする女性を休ませようとするためです。
茨城県のようにけんちん汁にうどんやそばをいれたり、けんちん汁をつけ麺にして食べる所もあります。
