すき焼き
すき焼きとは肉類や野菜を浅い鉄鍋で煮たり焼いたりして作る料理です。
すき焼きの名前の起源の主なものは二つあります。一つは杉焼きと言って、杉の箱に魚介類と野菜を入れてみそ煮にするものです。もう一つは鋤焼きといって、使い古した鋤の上に鳥や魚などを載せて焼くものです。すぎは杉を意味し、すきは鋤を意味します。
すき焼きは日本の地域によって調理法や入れる肉などが違います。すき焼きの多くの調理法は、割り下と呼ばれる砂糖、しょうゆ、酒などを合わせたもので煮ます。
薄切りの牛肉がすき焼きの肉として使われますが、北海道や東北などでは豚肉を使うところもあります。また鶏肉や魚をすき焼きとして使うところもあります。肉のほかには、ネギ、白菜、春菊、焼豆腐、しらたき、麩などが具材になります。
我々日本人は生卵をつけて食べますが、生卵を食べる習慣がなければ、別につけずに食べてもいいです。
